When you leave a tip for your waiter, that money is rarely kept entirely by that single server. Most restaurants implement tip pooling or "tip-outs".

How Tip-Outs Work

A server typically contributes a percentage of their total sales or tips into a shared pool: - Bussers: 1% to 2% of total food sales - Bartenders: 5% to 10% of total drink sales - Food Runners: 1% to 2% of food sales

Under modern Department of Labor rules, restaurants that pay servers the full standard minimum wage (without claiming a tip credit) can also include back-of-house kitchen cooks and dishwashers in the tip pool.
